Utilisation

  • Wheat gluten is used in seitan or minchin. “Seitan” means “protein” in Japanese. It is a paste obtained after mixing gluten and water, it also adds tamari or olive oil, recipes vary.
  • You can also add gluten in your bread recipes, especially those based on flour naturally gluten free.
