TASTING TIPS

Preparation

Soak overnight, discard soaking water.

Cook for about 1 hour on low heat in a large volume of water.

To facilitate digestion, add a few grains of cumin, green anise or fennel or a little Kombou seaweed to the cooking water.

Suggestion : Season with a drizzle of oil of your choice, salt and pepper.

Utilisation

Green “flageolet” beans will be appreciated as a hot dish and will accompany your fish, meat or vegetables.

Advice: it is recommended to combine legumes and cereals to benefit from their respective protein and amino acid contributions which are complementary (2/3 of cereals for 1/3 of legumes).
