TASTING TIPS

Preparation

Provide about 1 glass of cereals per person

Pour the volume of amaranth into 2.5 times its volume of cold salt or sweet water. Cook over low heat, covering 30 to 45 minutes from boiling.

Utilisation

  • Amaranth is eaten like a traditional cereal. A bit sticky when cooked, it will be ideal for making vegetable cakes with or without eggs.
